We can’t say enough about eating bison…where do we start? First off, it’s healthy. Besides being a complete protein with all of the essential amino acids our bodies need, it’s high in omega-3 fatty acids - the good kind from pasture-based proteins, it’s a rich source of B-vitamins (those mood and energy enhancing vitamins), rich in Selenium (an immune booster) and CLA’s (conjugated linoleic acid), iron and zinc! It’s a powerhouse and it’s low in fat. Bison is flavorful and almost sweet, like if you have tasted earth. Use it in lieu of ground beef in anything: chili, burgers, lasagna, pasta sauces, etc. We like it grilled on the stove or on the bbq, never overcook bison because it is a lean meat. Think medium to medium-rare.
